You’ll Love This Delicious Pad Thai Recipe for Camping, Backpacking or Van Life

The other night I was dying for some comfort food. Because a majority of our cooking happens outdoors, we wanted something super easy and fast so that we could eat and spend the rest of the evening cozied up in the van. I had totally forgotten about this recipe until Steven fired up the stove!

Steven concocted this quick Pad Thai as an easy way to fuel up out on the trail when he was backpacking. It’s a camping staple for us!

Here’s How to Make Delicious Pad Thai for Camping, Backpacking or Van Life

Ingredients
  • 1 package MAMA Noodles Shrimp Tom Yum Instant Shrimp Tom Yum Noodles — add as many packages as people you’ll be cooking for (i.e. two people, two packages)
  • 1 tbsp of peanut butter (again, add a tablespoon for each packet — two people, two tablespoons)
  • Optional:
    • Add 1tbsp of coconut oil for a more calorie-dense meal if backpacking
    • Add cooked tofu or chicken for extra protein
    • Add peanuts for an extra crunch
Directions

Cook the MAMA noodles as directed on the package. Once the noodles are fully cooked, add the peanut butter and stir until it has dissolved into a sauce. For a thicker sauce, set the pot aside and let it sit for a few minutes.
